Experimentation Techniques

Here’s the thing: we’re obsessed with making our own ingredients! We craft our own spirits, tinctures, syrups, mixers and garnishes, using experimental techniques such as distillation, infusion, barrel-aging, fat-washing, fermentation and other technical stuff.

The homemade range of distills take centre stage in these eclectic and creative cocktails. Flavor-laden mixtures are put through a thorough distillation process, allowing us to separate the different elements of the liquid to extract aromas and remove undesirable characteristics. The final product – the distill – is a clarified and purified concentrate of flavours that captures the heart of each mixture.

As odd as this may sound, at The Shady Pig we use milk to clarify cocktails. Milk washing is the process of adding milk to an acidic spirit base, then straining off the resulting curdled milk to produce a clear, smooth drink removed of harsh flavours. The protein in the resulting whey-spirit blend will activate when shaken, resulting in fluffy, richly textured cocktails.

The Shady Pig utilizes a unique technique called ‘milk washing’ to create smooth, flavorful cocktails like ‘Let your Hubby Home’ (a mixture of Bombay Sapphire Gin, Celery Distill, Cucumber, Lemon, Whey, Cherry & Rose) and ‘Sexy Colada’ (a mixture of Bacardi rum, pineapple, coconut and whey). By adding milk to an acidic spirit base and then straining it out, they achieve a clear drink with a rich texture and subtle sweetness.

A subtle yet sophisticated twist on your classic cocktails, are when they have been matured in oak barrels for a minimum period of three months.
